Updating metadata "Only on Send" setting

I like to convert my books by adding a font and some other formatting tweaks.

I can get the desired changes by clicking "Convert" before I send to my device, but I wonder if there's a setting (that I can't find) that will do those edits concurrently with clicking on "send to device".
