Mobi & Others LIKE Mobi to PDF - To Replace the Long Hyphen

Hi,

Converting from Mobi and other similar formats to PDF many files result in using the long hyphen:

holding it—ultimately

Is there any way in the conversion pre-settings to define it to use the regular hyphen in every instance?

And, to have spaces before and after?
