How do you split a book into chapters?

I've sucesfully split an omnibus into separate books. But the book doesn't 'record' the chapters as chapters.

So I can;t use the 'time left in chapter' stat on the kindle. It just records the entire book as one chapter

Is there any way of manually adding in chapters?
