question about metadata in content server

so currently i have a few custom columns that are set up and show up when i look at my content server. but the order random, and idk how you order the book details metadata order.

i looked at the book template in sharing over net but i haven't touched it and its already showing me the custom columns without those lookup names in the template. so im assuming theres some other thing in play here?
